Azuki (vigna angularis) also known as Japanese bean and rice bean, has small red beans. In Brazil, its consumption is linked mainly to the Japanese colonies. The Azuki bean, originally from Japan, is a wild legume (which grows without being sown). Its introduction in Europe took place after the 20th century, after being taken by Japanese immigrants to Brazil. It is a food of great nutritional wealth, as it is rich in protein, phosphorus, calcium, iron, potassium, zinc, soluble fiber and B vitamins.
